Dobrogean gastronomy
The food is part of the map: pond fish, oven dough, limestone wine and recipes that crossed language boundaries. We do not sell tables, we do not book tables, we do not publish a "top 10 restaurants". We tell you what to look for and how to ask, without made-up kitchen hours.
fish
Storceacul, brine, Lipovene soup and fish from the proțap keep the Delta and the banks of the Danube. Look for places with a schedule, not "the house on the corner, we heard." Species and prohibition are ANPA's - do not order what is not legally fished in season.
dough
The Dobrogean pie is a different family than the mountain pie: sheets, filling, oven. Tatar pie, catmer, chibar appear in Turkish-Tatar communities. You look for them in the morning, when the oven is warm, not "when we get to the evening".
The wine
Murfatlar, Ostrov, Sarica Niculitel, the limestone vineyards. Wineries have their own schedule: check their website, not a copied blog paragraph. Tasting is not a right to enter the vineyard by car.
Markets and post
The markets of Constanța and Tulcea hold cheese, salted fish, steppe greens. In Lent, many seaside menus stick to fish and batter - ask, don't assume. The Gluten Free Guide only notes places that have written in black and white that they have options.
Label
In homes and at shrines, you are expected to taste and thank. Tipping is customary, not a fee - see Protocol. Photographing the plate is one thing; photographing the host without permission is another.
What we don't do
We don't mark the "best stork". We do not copy menus. We don't claim a recipe is "authentic" if it's just popular. If a place closes in the winter, we don't keep it on a summer list like it's forever.
